Spanish tapas, why not?

I know I said this blog would be about Greek cooking, but in our last trip to Spain we gathered a bunch of cool pictures and vegetarian recipes, so I  have decided to post them. Most of them may be also prepared in a Vegan style.

One of my (and my father’s) beloved is the very Spanish “Russian Salad“. We usually  qualify a bar’s quality by their “ensaladilla rusa”. This one  in the picture was enjoyed by me and my partner in the bar of Restaurante My Casa (“My House”) in Sabiñánigo (Huesca), on our road to a gorgeous stay in Barcelo Hotel Monasterio de Boltaña last February.


Russian Salad is made with boiled potatoes, mayonnaise and boiled and/or vinegar chopped veggies: red peppers, pickles, olives, peas, carrot… It’s very important to add “escabeche”, that’s a kind of tuna in brine. If we want to make it vegan, we don’t use it and we add vegan mayo instead. We serve it cold and decorated with some parsley, red pepper and boiled egg (for the non vegan version). A couple of slices of bread are always served aside.

One more thing, don’t ask Russians about it. They have no idea, it’s a typical Spanish recipe! 😉
